There’s nothing fancy about it….just good ol’ southern comfort food.  This is a traditional meatloaf recipe that guarantees to be an easy success.  Let’s start with the ingredients.  I usually make a 2lb meatloaf because the Husband likes leftovers. 

–  2lb ground beef, bison, or ground turkey

– 1 sweet onion

– 1 green bell pepper & 1 red bell pepper

– 1 1/2 cups stovetop stuffing (I use store brand)

– 1 packet meatloaf seasoning (you could make your own, but its just easier this way)

– 1 can tomato sauce

– 2 eggs, beaten

– ketchup for garnish, or Heinz 57

Start by preheating your oven to 350 degrees.

Now, get out your glass pyrex dish- or metal is fine – and go ahead & spray it generously with non-stick cooking spray.  Also, go ahead & open the can of tomato sauce, and crack 2 eggs into a glass and beat with a fork, and measure out the stuffing, otherwise you’ll have to try to do all that with meaty hands, eewwww!!

First dice the onion and peppers, and place them in a large mixing bowl.  Really large, like the biggest one you own, trust me…  Mix in the meat, stuffing, seasoning, eggs, and half the can of tomato sauce.  Begin to mix well with your hands

Add more tomato sauce if necessary to make it sticky enough to form a loaf.  It will take a couple minutes of mixing.  Once it starts to gt sticky. transfer it to the pan and shape it.

Cover the pan with Foil & puncture a few times for ventilation.  Bake @350 for 1 hour, then remove to add ketchup glaze

Bake an additional 15 minutes uncovered, serve & Enjoy!!
